Slow Cooker Corned Beef

Few meals feel as classic and celebratory as a slow cooker full of corned beef gently simmering away all day. This dish has become a beloved St. Patrick’s Day Irish-American tradition, bringing families together around the table for a hearty, flavorful meal that practically cooks itself.

While corned beef isn’t traditionally Irish in the way many people think, it became a staple among Irish immigrants in America, where brisket was more affordable and widely available than the pork often used in Ireland.

While corned beef isn’t traditionally Irish in the way many people think, it became a staple among Irish immigrants in America, where brisket was more affordable and widely available than the pork often used in Ireland. Over time, corned beef and vegetables became the iconic St. Patrick’s Day dinner many of us grew up enjoying.

This slow cooker corned beef brisket recipe keeps things simple while delivering big flavor. The brisket becomes incredibly tender while onions, carrots, and celery slowly infuse the broth with savory richness. A splash of lager beer deepens the flavor beautifully, though you can easily substitute more beef broth or even a little dark soda if that’s what you have on hand.

Best of all, this recipe is nearly hands-off. Just layer everything into the slow cooker, turn it on, and let time do the work. By dinnertime you’ll have perfectly tender corned beef ready to slice and serve.

Ingredients

  • 1 large onion, diced
6 carrots, peeled and cut into large chunks
4 celery stalks, cut into large chunks
  •  3–4 pounds corned beef brisket, with seasoning packet
  • 4 cups unsalted beef stock
  • 12 ounces lager beer (optional substitutions: replace beer with additional beef stock,  use water if needed, or for a hint of sweetness, try dark soda like Coke.)

How It Comes Together

This recipe is incredibly simple and perfect for a busy day.

Step 1: Build the vegetable base

  • Place the diced onion, carrots, and celery in the bottom of an 8-quart slow cooker.
  • Spread the vegetables evenly to create a bed for the meat.

Step 2: Add the corned beef

  • Place the corned beef brisket on top of the vegetables.
  • Sprinkle the seasoning packet over the brisket and vegetables.

Step 3: Add the liquids

  • Pour in the beef stock.
  • Add the lager beer.
  • The liquid should mostly surround the meat but it doesn’t need to fully cover it.

Step 4: Slow cook

  • Cover and cook on LOW for 8–9 hours.
  • Cooking on low for a longer time is the secret to super tender corned beef.

Step 5: Slice and serve

  • Carefully remove the brisket from the slow cooker.
  • Slice against the grain for the most tender texture.
  • Drizzle a little of the cooking liquid over the slices to keep them moist.
  • You can discard the vegetables or serve them alongside the meat.

Entertaining & Serving Ideas

Corned beef is perfect for gathering friends and family, especially for St. Patrick’s Day celebrations. Try serving it with:

  • Buttery boiled potatoes
  • Roasted cabbage wedges
  • Warm Irish soda bread
  • Stone-ground mustard or horseradish sauce

Leftovers are fantastic too. Thin slices make incredible Reuben sandwiches, or chop the beef and vegetables for a next-day corned beef hash topped with fried eggs.
