Wedge Salad Lettuce Wraps with Avocado

Ingredients

  • 1 head lettuce separated into large cups(Romaine, Butter or iceberg lettuce)
  • 1 cup cherry tomatoes halved (or 2 Roma tomatoes diced)
  • 6-8 slices, cooked until very crispy and crumbled or whole
  • 2 ripe avocados (sliced or diced)
  • 1/2 cup thick blue cheese dressing or ranch
  • 1/4 cup thinly sliced red onion
  • 1/2 cup blue cheese crumbles (feta works too)

Instructions

  1. Remove the outer leaves of the lettuce head. Remove the core.

  2. Gently separate the leaves into cups that will hold filling.

  3. Wash and dry them thoroughly. Set aside.

  4. Fry the bacon until very crispy, then cool and crumble or use full slices.

  5. Slice the avocado.

  6. Halve the tomatoes.

  7. Slice the onion if using.

  8. Lay out the lettuce cups on a platter.
