When you don't feel like vegetables, this is the dish for you. Healthy and most importantly, delicious. Great for a weekday dinner by itself or serve it as a side to dress up any table.
Preheat your oven to 400°F.
Sauté onions and garlic in olive oil in a skillet. Spread the onion and garlic mixture in the bottom of a casserole dish sprayed with cooking spray.
Evenly arrange the vegetable slices vertically in the casserole dish, alternating vegetables to create a pattern. Sprinkle seasoning and salt/pepper to taste.
Remove aluminum foil. Sprinkle with cheese and bacon crumbles. Return to oven and bake an additional 15 minutes (uncovered), or until cheese is melted and lightly browned.
